I learned this cooking hack one night when my hubby decided he wanted to pan sear and bake his steak at the same time I was trying to bake red skin potatoes to go with our dinner. The temperatures were different so there was no way I could cook them together, so I took to the internet for a stove top recipe and came across this gem. I've been pretty much obsessed ever since, especially since I can make a single serving for myself each day for lunch (or as I call it, second breakfast, pictured below).
Cut redskin potato(es) into bite sized pieces and place on a microwave safe plate. Cook in the microwave for 6 minutes.
After about 5 minutes have elapsed heat up some olive oil in a non-stick pan over medium high heat (I use about 1 teaspoon of oil per potato).
Once the potatoes are done, move them from the plate to the pan and toss to coat in the oil.
Let them brown for about 2-3 minutes on the stove, stirring frequently. Top with kosher salt.
I love to eat mine with scrambled eggs, jalapeños and a little bit of shredded cheddar.
