You guys!!!! First and foremost, I cannot take any credit for this technique. This is all old skool, Alton Brown Good Eats, where science meets yumminess (If you have no idea what I'm talking about, you need to carve out an entire day to watch reruns of the best cooking show ever...Find it here!). Anyhoots, I know you don't believe it. I know you don't think that you can obtain that deep fried crispiness in the oven, but you CAN! I PROMISE! Without further ado, Here we go! Get yourself some chicken wings, and a spouse/partner/sucker (or in my case, husband) to cut off the wing tips and separate them. If you don't have one of those, you'll have to do it yourself. I wish you good luck.
Once your wingies are all separated, get a large pot and fill it with about an inch of water and place them on a vegetable steamer (you know, the kind you used to put on your head as a kid while you were playing in the cupboards?), like this...
Turn your burner on high, plop the steamer and wings in, cover and steam for 10 minutes. We had to do ours in two batches. You don't want to overcrowd them! The whole point of this process is so that the fat steams out, so you'll notice fatty water in the pot afterwards. Once all of them are steamed, lay on a cooling rack and put them in the fridge for an hour.
Wait in anticipation for 60 minutes...
Preheat your oven to 425!
Take your wings out of the fridge, set the cooling rack on top of a baking sheet and put it in the oven on the middle rack! 20 minutes later, flip them over and let the other side bake! Halfway through, you may feel like they aren't going to crisp up. I was pretty nervous, I'm not gonna lie. But have faith my friends! 20 more minutes and those bitches are gonna be perfect! If your oven isn't exact, maybe let them go to 25, but you shouldn't need much more than that!
Shake them in any kind of sauce you like while they are still hot. We took the easy route and bought Frank's Red Hot Buffalo Wing sauce. I give you....the most delicious wings I've EVER had!
