I was born in upstate NY, but I'm a Southern girl at heart. My parents moved to the Southern Outer Banks of North Carolina during my freshman year of college, and I fell in love immediately. Being a football wife, I have moved a lot over the years. Texas, Alabama, Colorado. All amazing places. But the Crystal Coast is my home. One of my favorite stops is The Chelsea in New Bern, NC, where we lived while my hubby was coaching linebackers at New Bern High School. Their grits are TO DIE FOR. I've asked for the recipe but to no avail. But this. This was close! I couldn't BELIEVE that I was able to echo the flavors. I mean cauliflower grits with almond milk will NEVER taste as good as real grits with heavy cream, but this. This made me feel like HOME.
1 head cauliflower
1/2 cup cream, milk, or almond milk (I used almond milk)
1/2 cup shredded cheddar cheese (Or dayia or nutritional yeast if you're dairy free)
2lbs raw, peeled and cleaned shrimp
1 large shallot
2 cloves garlic
2 tbsp olive oil
1 tbsp butter
Seasoning for the shrimp:
salt and pepper to taste
1/4 tsp dried oregano
1/4 tsp dried parsley
1/2 tsp paprika
Dash of cayenne
Cook 2 slices of turkey bacon (you can use pork bacon, but I choose not to eat piggies) and set the pan aside.
Chop cauliflower into florets and pulse in food processor until rice like texture and add to 3/4 cup boiling water. Turn heat down to medium and simmer until liquid is absorbed (this took about 20 minutes), add 1/2 cup of almond milk, stir, and continue to cook until thick and creamy. Stir in grated cheddar cheese, a dash each of salt and pepper, and leave on low until the shrimp are done.
After cooking the grits, finely chop 1 large shallot and 2 cloves garlic (I prefer the ready-chopped garlic in the jar and use about 2 tablespoons...I lurve garlic) and sautee with 2 tbsp olive oil and 1 tbsp butter until fragrant, in the same pan where you cooked the turkey bacon. Add the uncooked, seasoned shrimp and cook over medium high heat until all the way pink.
Pour the shrimp mixture overtop of the "grits" and top with to pieces of roughly chopped turkey bacon.
