Super Easy Spinach Casserole
I'm not a huge veggie fan. I'm never gonna go crazy over just veggies with nothing in them to jazz up the flavor and, quite frankly, the fat content. I LOVE anything cheesy, ooey, and gooey. So I was surfing the web for a suitable spinach casserole recipe when I came across www.3fatchicks.com. They have a TON of yummy recipes, but this one just jumped out at me for it's simplicity. It DID NOT disappoint on taste and couldn't have been easier to make. It's a must try.
Since it was just myself and my husband, we halved the recipe. Here it is, as we made it:
1 package frozen, chopped spinach
1 cup low fat cottage cheese
1 egg, beaten
1/4 cup grated parmesan.
I had my super strong husband defrost the spinach and squeeze out any excess water while I mixed the cottage cheese, beaten egg, and parmesan together in a bowl. Once he was done, we plopped it in and mixed it around. Once combined, I divided the mixture between two greased Corningware french white individual serving casserole dishes (which are on my list of MUST have kitchen supplies), and popped them in the oven on 375 for 25 minutes.The finished product is seen to the left (to the left). And it was SOOOOO good.
