Super Simple Crock Pot Fiesta Chicken
You literally CANNOT screw this stuff up. You want simple, shreddy chicken? Here goes...
4-6 Boneless skinless chicken breasts
1 cup of Salsa (any brand, any flavor)
Put the two ingredients in the crock pot and stir them around to get the salsa all over. Turn it on low for 6-8 hours (if you need it done faster, pop that baby on high for 4 hours). Check in around hour 6 to break up the chicken into chunks. I use a big wooden spoon and just take stabs at it. If you're stuck at work all day, no worries. It should break up just as well at hour 8. Then just enjoy your no fuss dinner. You can use this on tacos, or by itself served with brown rice. You could even do this with BBQ sauce to make chicken sandwiches!
