21 Day Fix Container Guide:
(depending on the size of your banana. Mine were small so I counted it as a half purple and the berries as the other half)
1 tsp for the coconut oil
So there I was, two days into my 2nd round of the 21 day fix, and I wanted PANCAKES!!! So, I tried to find a recipe that would work for me. I found quite a few recipes that worked, but were a little too complex. I stumbled across this one on pinterest, and it had no affiliated website, so I'm not sure where it came from, but boy am I glad I found it. They were a bit banana-y, (I didn't have any vanilla extract, so that may have been a difference maker) but I definitely INHALED them. They were so good, and I guess some people would consider them "clean", though I don't know if eggs actually qualify as clean eats. Anyhoots, they were yummarooney.
2 egg whites
1/2 cup oatmeal
1/2 tsp vanilla extract
Put all ingredients into a blender and blend until smooth.
Heat a skillet to medium high with 1 teaspoon of coconut oil. I think everyone knows how to make a pancake, but pour three even portions into the pan (or make Mickey Mouse ears) and flip when they start to bubble a little.
I mashed and heated up a handful of raspberries in a small saucepan just until they were saucey and put them on top. Enjoy!
